Breakfast Inspiration (1): Banana pancakes. Healthy, gluten free and easy to make.

This blog post is the start of two new series on my blog: Breakfast Inspiration and Alternative Lunches. These series will be marked by alternatives for the ‘standard’ breakfasts and lunches, which often revolve around bread. For a while, I have been eating – consciously – less bread and I would love to share some ideas to do things differently. This is the kick off of the series about breakfasts. Today I would like to share a recipe for delicious, and healthy pancakes (because it’s National Pancakeday today!). One of the major advantages of this recipe is that it allows for endless variation, they are super easy to make and they are gluten and dairy free.

BANANA PANCAKES

Banana pancakes with fruit, nuts and coconut

THIS IS WHAT YOU NEED
– 1 ripe banana
– 2 eggs
– pinch of sea salt
– (coconut) oil

For variation:
– cinnamon
– shredded coconut
– fruit (blue berries, for example)
– nuts
– raisins or goji berries
– chia seed
– agave syrup
– (raw) cocoa powder
– etc.

THIS IS WHAT YOU HAVE TO DO
1. Peel and mash banana in a bowl

2. Add 2 eggs and sea salt and whisk

3. Add optional ingredients to the batter, for example cinnamon and goji berries

4. Bake in (coconut) oil, in small portions or all at once

5. Decorate with other ingredients of your choice.
